Mayonnaise

Ingredients

1 Revival Farm egg yolk

¼ t dijon mustard

1 t white wine vinegar

1 ½ t fresh lemon juice

½ t salt

¾ C safflower oil

Instructions

Add egg yolk, mustard, vinegar, salt and lemon juice to bowl of an electric stand mixer. Using the whisk attachment, whip egg mixture for a minute or so to combine. Scrape sides and bottom of the bowl to make sure all ingredients are well blended.

With the mixer on medium low, spoon ¼ of a teaspoon at a time of the oil into the egg mixture allowing the oil to be well combined before adding more. When ¼ of a cup of oil has been added, the rest of the oil can be slowly drizzled into the mixing bowl. Once all the oil has been added, continue to whip for 7 minutes until mayonnaise is thick and light in color. Store in refrigerator for up to 7 days.
